Marmalades: bitter orange, orange, figs, plums, mulberry. Fruits are harvested, and marmalades produced same day in the most genuine way. You’ll find them on the table during breakfast, but in our shop too.
Dried tomatoes in olive oil, aubergines in olive oil: The "siccagni" tomatoes, typical of the Corleone area, are traditionally dried in the sun for about a week on the second half of august. Then put in olive oil, our olive oil of course. Aubergines are cooked in some vinegar and put in olive oil.
The tomato juice and tomato essence: The first days of September, in the simplest and genuine way we produce the tomato juice that then is put in glass bottles and used in the kitchen all year round. The essence, the abstract is also traditionally produced in the sun and wind. It is really amazing to experience how a simple, fresh, genuine tomato juice can so strongly determine the quality of a dish.
