It is a tasty dish that can be a great starter for a rich aperitif.
Ingredients for 12 balls:
- 1 cauliflower (1 kg)
- 2 eggs
- 1tbs of greated parmiggiano reggiano
- 1tbs of bread crumbs
- 100gr of local “primo sale” cheese
- a pinch of salt and pepper
Clean the cauliflower eliminating the hard part of the stem and cut it into small parts, after that wash it under running water.
Boil some water in a pan with a bit of salt and cook the cauliflower for about 10 minutes, drain it well to eliminate all the remaining water and put it in a bowl. Squash it with a fork, add the eggs, the parmesan, the bread crumbs, salt and pepper and work it until you have smooth and homogenous dough.
Divide the dough into small balls and put a cube of cheese inside them, coat the balls with breadcrumbs and then put them in the fridge for 30 minutes.
Deep fry the balls in hot oil, add salt and serve warm with a glass of fruity white wine such as Inzolia or Viognier.
