INGREDIENTS for 5 people:
1 kg of beans (the weight includes the pods)
1 kg of peas (the weight includes the pods)
1 small glass of vinegar
3 tablespoons of sugar
extra virgin olive oil
salt and pepper
Clean the artichokes by cutting the tips and eliminating the first leaves, until you get to the more tender part. Cut the artichokes into quarters and put them in water with lemon. Shell the peas and beans, cut the onion and fry it in a pan, first with some water and then with extra virgin olive oil.
Drain the artichokes and add them to the mix, together with beans and peas.
Cover with some water, add salt and pepper and cook over medium heat with the lid covering the pan.
Add the sugar and the vinegar to the mix and cook for some minutes.
The “Frittella” should be eaten cold. It can be used also to dress pasta: sugar must not be added; add some mint leaves and fresh ricotta cheese.
